There are thousands of kinds of tea. Each kind of tea has its unique character. The characters depend on natural factors and human factors. Natural factors mainly refer to the geographical and climatic conditions of the tea producer. Human factors mainly refer to the cultivation, picking, processing and preservation of tea.
Natural factors are basic to the tea. If the natural conditions don’t suit the growth of tea, then no matter how good processing, also can’t make high quality tea. So when select tea, you should see the producer at first. It’s generally at subtropical areas with warm and humid climate, abundant rainfall and moderate sunshine, moderate soil pH. Temperate zones with cold, less rainfall also produce tea, but the quality of the tea is relatively worse. For example, China ten famous teas are all produced to the south of 35 degrees north latitude.
The cultivation of tea, of course, is better not or less with pesticides, fertilizers, but with the green way. This means that farmers have to pay more labor, and the cost will certainly be higher
The time of picking tea has a significant impact on the taste of tea. Generally speaking, the earlier tea with small leaves is tender, elegant and less juice; the later tea with large leaves is bitter, mellow and more juice. The picking time is not the earlier the better. The price of earlier tea on the market is high, mainly because of low yield, in addition to the speculative factors. Choice should depend on one’s actual situation. For example, in common earlier tea is fit for light-diet people, and mellow tea is fit for greasy-diet people.
When tea is picked down, it can be directly soaked in water to drink. Then why do we process it? The main purpose of processing is to remove the water in tea, concentrate extract, in order to drink, transportation and preservation conveniently. Therefore, the processing is not the more complex the better. The most important is when maintaining the naturalness of tea, its characters can be better revealed at the same time. Then when drinking, we can not only taste the tea but also feel the nature flavor through the tea.
Through different processing methods, or the natural change in preservation, tea can ferment. Different manners and scales of fermentation can make its flavor, color and function different. The fermentation of Keemun black tea is through the special processing, Pu’er tea is natural fermentation in a long time. In addition, green tea may get wet and then ferment. This tea can still be drunk, but it loses the unique taste of fresh green tea.
In short, the tea itself is hard to compare good or bad in most of the time. Environment, climate, season are various, human health, taste habit, character and mood are various, so it is suitable for drinking different tea. It seems that for ordinary people to select their own suitable tea is really hard. In fact, there is the simplest way. That is: follow your own body. If your body feels happy and relaxed, then this tea is good for you. When drinking tea, you could calm your mood and carefully feel the communication between your body and the tea. Then you will not only find your favorite tea, but also find a more healthy self.
